docs: record that zeus's container needs --stop-timeout

Verifying the v2.11.3 shutdown on zeus showed docker stop hitting its default
10s timeout and SIGKILLing the process mid-teardown (no 'exited cleanly' in the
log). The final snapshot landed first so nothing was lost, but a slower snapshot
would be killed before its rename, putting the next boot on WAL-only replay and
read-only mode - the failure v2.11.2 fixed, reintroduced by the runtime.

Container recreated with --stop-timeout 120; a stop is now clean end to end.
